I'm going to try it for sure. I also have a wonderful recipe I learned but...ssshhhhh!...it's half the fat and calories of a regular cake! Buy any store-bought spice cake mix. Stir in a 15-ounce-can of pure pumpkin. Bake according to box. The end. No eggs, oil, etc. Just the box mix and pumpkin. I call it pumpkin bread, then I don't have to put icing on it! It tastes great, the kids love it and no one knows it's healthier! Great with coffee too! :) I love the recipe! I'm going to try it for sure. I just finished baking your pumpkin bread recipe and it's delicious. The kids are drooling over it. My dear husband requested pumpkin bread some time soon when he saw luscious pumpkin muffins at Whole Foods Market this afternoon. They wanted $2.50 per muffin. We are not that family willing to spend that much on a single muffins with a family of six. I went home and made two (2lb.) breads for peanuts. Thanks for the encouragement.
