In My Heart, I’m Cajun {Giveaway}

On our long, long trip home two weeks (from this trip) ago, we found ourselves speeding down a highway in the middle of swamps. I am not kidding. 
It’s called Louisiana.
My hubby decided we needed to learn more about this unknown-to-us land, only four hours from home, so he stopped at a fancy rest stop, complete with an Education Center. [Okay, it was really a complete accident we stopped there, or I should say we were trying to avoid an accident and took the first immediate exit.  Because. Y’all. This bladder ain’t what it used to be and I was doing a serious dance in the front seat. I even begged a little).
So, we potty’ed and took a quick tour–complete with a talking bird and turtle–it was like Disney all over again (I am not making fun of you, Louisiana, don’t be sensitive). It was really cool.
Anyway.
We hopped back in our car and do you know what The Hubby and I wanted in SOME KIND OF BAD WAY?
Cajun Food.
Because we may not be experts on Louisiana, but we know good food.
So. We stopped at Popeye’s. (Again, not joking, we’d been in the car eleven billion hours and I wasn’t about to do a sit-down dinner).  But this wasn’t any Popeye’s this one had a mighty strong Cajun flavor.
I have four words for you: Red. Beans. And. Rice.
And these weren’t your everyday red beans and rice. They had been Cajun-a-fied, I’m sure of it.
The day after we unpacked and I refilled our fridge, I pulled out this puppy:
What is that fine appliance, you ask?  It’s a Cuisinart Rice Cooker PLUS. It’s a mean, rice-cooking machine. It’s my first one in my 15 year marriage. I’m finally a grown-up cook!
The fine people of Cuisinart sent one to me to try out (for free!) And we had rice three nights in a row, cooked differently. Plus, it’s a slow cooker and you can brown meat in it! I’ve made soup too. As a matter of fact, I pretty much don’t need any other countertop appliances…good thing since my toddler knocked my slow cooker off the counter and dented is severely.
But, it also made this:

Cajun Red Beans and Rice.
Here’s the recipe (that came with the appliance):

Makes 4 cups

4 ounces smoked chicken or turkey andouille sausage* 

cooking spray

1 can (15-ounce) red beans, rinsed and drained

1 teaspoon good quality olive oil

3 tablespoons finely chopped onion

2 tablespoons finely chopped celery

3 tablespoons finely chopped green bell pepper

1 clove garlic, finely chopped

1 cup (Rice Cooker) long grain rice

••• teaspoon thyme

1 bay leaf

1••• cups (standard liquid measure) chicken stock

3 tablespoons chopped Italian parsley 

Tabasco® or other hot sauce

Divide the sausage in half. Finely chop half the sausage; cut the remaining sausage into •••-inch pieces. Lightly coat the interior of the steaming tray with cooking spray. Place the red beans and sliced sausage into the steaming tray; reserve.

Insert the cooking bowl into the Cuisinart® Rice Cooker/Steamer. Place the olive oil in the bowl, cover, and turn on for 1 minute. Add the onion, celery, bell pepper, and garlic; stir to coat with oil. Cover and cook 3 to 4 minutes. Stir in the rice and thyme. Stir until rice is opaque, 3 to 4 minutes. Tuck in the bay leaf and add the chicken stock. Place the filled steaming tray on the bowl; cover. Turn the Rice Cooker on and cook until it switches to Warm, about 18 minutes. Let stand at Warm for 5 minutes. Transfer beans and sausage to a medium bowl; add cooked rice mixture to the same bowl. Remove and discard bay leaf. Gently toss rice mixture with beans and sausage. Add parsley and toss to combine. Transfer to a warmed bowl to serve. Serve with hot sauce if desired.

*Smoked chicken or turkey andouille sausage has much less fat than traditional pork andouille. It can be found in many well-stocked grocery stores. Smoked turkey kielbasa can be substituted.

    I would use it to make Jasmine Rice!!! We LOVE Jasmine rice, but it is tricky to get the proper sticky texture without a rice maker. This would be PERFECT!

    I'd make italian chicken and rice. One bottle of Italian Dressing, some boneless skinless chicken breasts, and some cheese as well as brown rice. It is tasty. Everyone in the family loves it…and it's great with a salad on the side!

    Oh I need a new rice cooker so bad. My husband is cajun, born and raised in Breaux Bridge. I am a Houstonian, born and raised. When we met I had never eaten jambalaya much less cooked it. Now 5 years later all I cook is cajun food. I cook jambalaya with sausage in my rice cooker as well as rice for gumbo. My poor little rice cooker is on it's last leg though.

    I would definitely and happily make RIISENGRUT, from my Norwegian roots. It's white rice and milk, slowly cooked till it's creamy and tender, then served with a chunk of real butter and lots of cinammon and sugar (or nutra seet) sprinkled all over the top, generously! And for us, at Christmas, my mother always hid an almond within the rice in one bowl and the winner got the jar of pennies she had saved all year long. I can taste it right now!

    I would make steamed white rice because every. single. time. I try to make it in a saucepan with water, I scorch it! DH doesn't like instant rice so this would be a nice addition to our kitchen.

    Rice Pudding! :)

    2 cups rice (cooled)
    2 eggs
    1/2 cup Sugar
    1 dash Nutmeg
    2 1/4 cups milk
    1 tsp vanila

    Cooking Instructions
    Separate egg yolk and whites
    beat egg yolk, add milk, sugar, vanilla, and rice
    beat egg whites until stiff and add last
    Butter pyrex baking dish and add mixture
    Bake in oven at 350 degrees F for 45 minutes
    sprinkle with nutmeg out of oven

    I would like the Cuisinart and in exchange I will tell you my secret to real Louisiana Red Beans and Rice. Buy Tony's Red Beans and rice seasoning mix, put it in dried red beans in a big pot on stove, add sausage and let it cook for 4 hours or so on low to med heat. Pour it over rice.

    Considering I live in & am from SE La (Northshore) & my husband is Japenese we eat a TON of rice. I buy it in 20lbs sacks at Sams. (No joke..just freeze it) So I would make jambalaya, white rice for gumbo, & fried rice. And those are just our top 3. BTW…thank you Jesus that there are 2 yes 2 Popeyes in my town….but Copelands is a good choice also.

    I have a recipe that takes a box of Zatarains black beans and rice, water, a can of Rotel Tomatoes, cup of frozen corn, can of green chilies and a lb of ground beef/turkey (sprinkled with cilantro when done)…I think this would be a cinch in the rice cooker PLUS.

    Then…om to Basmatti rice for some Indian Food!

    Oooh, I've wanted a rice cooker since we were in Japan. They love their rice there. We love rice especially Japanese rice. Trying to get them to eat healthier with brown rice, so that is definitely what I would attempt to fix more of. :D Thank you for the great giveaway!

    I would make some white rice like my sister-in-law makes when I visit her in NH. I mix it with butter and pepper and it is delightful. She says it is all in the rice cooker which by the way is the same one that you have!!!

    I have actually had a serious craving for a spicy rice/sausage dish of some kind so I'd prolly borrow your recipe and make that :) although I'm sure the boys would like it if I made them their favorite "white rice and peas"
