This is my favorite summer dish! It’s delicious and yummy and terribly good. Did I mention that I love it?
It’s easy to make too!
Baked Zucchini Tomato Pie
Ingredients:
2 zucchini, sliced
2 garden fresh tomatoes, sliced
6 slices of cooked bacon, crumbled
Sprig of Basil, chopped
1/2 Cup of mayonnaise
1/2 Cup of shredded Parmesan cheese
Directions:
Lightly saute 2 chopped zucchinis in a dab of olive oil. Salt and pepper.
Cover the bottom of a pie shell with the sauteed zucchini. And cover with fresh tomato slices.
Mix parmesan cheese, mayo, bacon and basil:
Spread over the fresh veggies:
Sometimes I make enough for two!
Bake for 30 minutes at 350 degrees.

I absolutely LOVE tomatoes and zucchini….I am the only one in my family who usually eats it though….maybe if I made this, they would change their minds! 🙂
My recipes for this week have a pie similar to this in them (on Monday’s post) but THIS is the pie I was hoping for! I made our pie last night and it was pretty much a flop. The kids choked it down and the hubby turned leftovers down for lunch today! I’ll have to try THIS one next week!

Yes, I prebake the shell and usually use whatever kind I have!
